A Thai street-food staple, although a relatively recent one. Of course, you’ll never be able to replicate the smoky tinge that comes from a veteran, battle-scarred street wok. But this has it all – slightly frazzled beef, oozing fried egg, the ubiquitous chilli and the clovey, slightly tongue-numbing holy basil. Get the best beef you can afford, preferably coarsely minced sirloin.
