Putting milk in tea is often thought of as a British thing, but make no mistake: despite any colonial influence, milk tea belongs to Hong Kong and it’s one of the city’s most iconic beverages. I love Hong Kong and I think of it as a second home, so naturally I had to get busy with a milk tea-inspired dessert. It begins with passion fruit cream spiked with peaty Macallan 12 whisky.
