Salting tomatoes, then letting them drain in a colander for about twenty minutes, draws out excess moisture and concentrates the flavor.


  • 3 ripe tomatoes, cored, seeded, and diced
  • 1 yellow tomato, cored, seeded, and diced
  • ½ yellow bell pepper, stemmed, seeded, and cut into ¼-inch dice
  • ¼ cup finely chopped red onion or scallion
  • 2 tablespoons minced cilantro or parsley
  • 2 jalapeños, seeded and minced
  • Juice of 1 lime, or more to taste
  • Salt


    Combine the tomatoes, pepper, onion, cilantro, jalapeños, lime juice, and salt to taste in a small bowl. Let stand at room temperature for about 1 hour before serving.
