This mixture of vegetables was inspired by a Spanish-style cooked sauce usually served with fresh cod. The ingredients can be varied as availability and taste dictate, but the tomatoes and onions are essential. The vegetables can be grilled over a hot fire or cooked under the broiler. If grilling outdoors, arrange the tomatoes in a wire basket so they hold their shape; skewer the onions crosswise so they don’t fall apart during cooking.
