Combine the mushrooms, onion, garlic, and olive oil in a large skillet. Cook, stirring, over medium-high heat, until the mushrooms are tender and liquid has evaporated, about 5 minutes. Add the parsley, sundried tomatoes, and salt and pepper to taste. Cook stirring, until blended, about 1 minute. Transfer to a food processor and puree. Serve warm or at room temperature.
