In this dressing, the tomato is the dressing. Surprisingly, it has only one tablespoon of olive oil, but it seems much richer than it is.

Ingredients

  • 1 ripe tomato, coarsely cut up (about 1 cup)
  • ¼ cup (packed) coarsely chopped fresh basil
  • 1 small g

Method

Combine the tomato, basil, garlic, and salt in a food processor. With the motor running, gradually add the oil until the mixture is finely chopped. Add pepper to taste.
