This recipe is from spa chef Kathleen Daelemans of the Grand wailea Resort in Maui. Café Kula is her dazzling spa restaurant. Kathleen was new to spa cooking when she was hired away from Zuni Café in San Francisco to open this spectacular resort. As with many innovative chefs, her inspiration was the produce available to her from local farmers.

“The first time I visited Robbie Friedlander’s organic farm,” she says, “I wrote my whole menu from what he had there.” Kathleen makes this sandwich with sweet Maui onions and local tomatoes.
