Homemade pizza dough can be made in a couple, of minutes. It takes 45 minutes or so to rise, but you can throw the dough together the night before or earlier in the day, refrigerate it, and let it rise slowly until you’re ready to bake. If you have tomato sauce on hand, you can assemble a pizza and have it hot on the plates by the time you set the table and pour a glass of wine or beer.
