Onions are usually thought of more as a flavor enhancer than a main event. But whole roasted onions are something very special. As the onions cook, their natural sugars surface and the sharp raw onion is converted to a sweet and creamy consistency. In this recipe we mix three types of onions and roast them together with Jerusalem artichokes.

The Jerusalem artichoke is a member of the sunflower family. These knobby tubers are a good source of iron. If they are not available, prepare this dish with just onions.
