Like many other Americans, for years we ate sweet potatoes only on Thanksgiving and other holidays. Sweet potato slices can be baked as well as grilled.

Ingredients

  • 3 or 4 sweet potatoes, peeled and cut into ¼-inch slices (1½ to 2 pounds)

Method

  • Place the sweet potato slices in a large bowl and drizzle with the olive oil. Toss to coat evenly.
  • Arrange the slices in a grill basket or place on a fine mesh sheet designed to keep small pieces of grilled foods from falling into the fire. Grill until browned on 1 side, turn, and grill the other side until potatoes are tender. It will take 20 to 25 minutes total
