A classic Italian dessert, with no fat at all. A granita, or frozen flavored ice water, is fresh tasting with a distinctive granular texture. It’s like eating intensely flavored ice. Granitas are easy to make—you simply cut the syrup repeatedly as it freezes until it forms coarse crystals. They melt very quickly, so we suggest serving granita in stemmed glasses which have been frosted in the freezer for at least an hour before serving. There’s nothing more refreshing in hot weather.
