I love enchiladas as much as the next guy, but they can be a hard dish to pull off on a weeknight. This casserole solves that problem. It has all the flavors of a delicious enchilada dish but takes a fraction of the time to pull together. The secret is to not actually make enchiladas. Just throw some corn tortillas in the casserole. Works like a charm!

Ingredients

  • 1 pound chorizo sausage
  • 4 cups cooked black beans
  • 2 cups chicken stock
  • 2 cloves garlic, minced
  • 1 lime, juice only
  • ½ teaspoon ground cumin
  • 2 teaspoons chili powder
  • Salt and pepper
  • 12 (6-inch) corn tortillas
  • 4-6 ounces (2 cups) grated Pepper Jack cheese

Method

  1. Preheat oven to 450°F.
  2. Cook the chorizo in a medium-size pot over high heat. Brown the meat well on all sides and break it up into pieces.
  3. Remove chorizo from pot and set aside. Add black beans, chicken stock, garlic, lime juice, cumin, and chili powder to pot. Season with a pinch of salt and pepper. Bring bean mixture to a simmer and mash well to form a thin paste.
  4. Add 1 cup of the bean mixture to the bottom of a 9 × 13-inch baking dish.
  5. Working with one tortilla at a time, dip each one in the remaining bean mixture in the pot. Let it sit in the hot bean mixture for 10 seconds to soften. Remove soaked tortilla and fold it in half and then in half a second time, making a triangle. Place it in the casserole dish.
  6. Continue with all tortillas until they are completely layered in the dish. It’s okay to overlap them a bit if you need to so they all fit. Then pour remaining bean mixture over the top.
  7. Sprinkle chorizo on top of casserole and finish with cheese. Bake until the casserole is bubbling and brown in spots, 25 to 30 minutes.
  8. Let casserole cool slightly before serving. Don’t forget to top with optional garnishes!
