I love enchiladas as much as the next guy, but they can be a hard dish to pull off on a weeknight. This casserole solves that problem. It has all the flavors of a delicious enchilada dish but takes a fraction of the time to pull together. The secret is to not actually make enchiladas. Just throw some corn tortillas in the casserole. Works like a charm!
