Ten-Minute Lentil Wraps

Lentils can be almost meaty, even more so than beans, I think. There’s something about them that is completely filling, which makes them great for a vegetarian lunch option.

Any time I have lentils on hand, I like to mix them with some veggies and stuff the whole shebang inside a few tortillas for a quick and healthy lunch.

Besides the basic wrap ingredients I’ve listed below, feel free to use almost any crunchy vegetable. As long as you shred it or slice it very thin, it’ll work well in these wraps.

  • 2 cups cooked lentils
  • ½ cup crumbled feta cheese
  • Olive oil
  • Salt and pepper
  • Large flour tortillas
  • Baby spinach
  • ½ cup slivered red onions
  • Sprouts


  1. Mix lentils with feta cheese. Add a drizzle of olive oil and season well with salt and pepper.
  2. Lay a tortilla flat and add some spinach to the middle. Top with red onions, sprouts, and the lentil mixture.
  3. Fold the ends of the tortilla over and roll the wrap away from you. Try to keep it nice and tight so the ingredients don’t fall out.
  4. You can either serve these whole or slice them up for a tasty appetizer.
