Lentils can be almost meaty, even more so than beans, I think. There’s something about them that is completely filling, which makes them great for a vegetarian lunch option.
Any time I have lentils on hand, I like to mix them with some veggies and stuff the whole shebang inside a few tortillas for a quick and healthy lunch.
Besides the basic wrap ingredients I’ve listed below, feel free to use almost any crunchy vegetable. As long as you shred it or slice it very thin, it’ll work well in these wraps.
