This was one of my grandfather’s specialties, and no one could make it quite as well as he could. The memory of him and my nostalgia for this dish is why it is one of my favorite recipes.
Place the beans in a large pot and cover with cold water. Bring to a boil, then reduce the heat to low and simmer for 1 hour. Drain and set aside.
