THE RECIPE Tarte tatin is the pastry version of upsidedown cake. Apples or other fruits are boiled in sugar that then caramelizes. A layer of dough is placed on top. After cooling, the whole is flipped onto a serving dish. Try this recipe with nearly any fruit. Just reduce the cooking time if using a softer fruit: 30 to 40 minutes is best for pears, 20 to 30 minutes for berries.
