Ingredients: Mayonnaise; 6 slices of mortadella (thin as possible); 2 tbsp passata; There’s a chance I put some ‘nduja that was in the fridge in here too but I can’t remember; Mother’s Pride-type bread; Dried oregano; Half a scamorza (if you can find it) or a cheap mozzarella ball, sliced in rounds after being drained and left in the fridge on a plate to dry out for an hour or so

The picture shows two toasties, but I’m so greedy I’d try and get this much in one.

Turn on the toastie machine so it starts getting hot.

Mayo the outside of the slices of bread. It browns MUCH better than butter because it’s made of oil and egg. Even though you’ve mayo’ed it, put the bottom slice down on the chopping board. Pile on the mortadella extravagantly. Good splosh of p
