You can quite clearly buy a banging McVitie’s Ginger Nut biscuit. And if that is your bag, then do so. But the following are dangerously good, and more doable than one might think, so why not give a batch a go?
Start by melting the butter, sugar and syrup together in a heavy-bottomed saucepan over a medium heat.
In a mixing bowl, combine the flour and ginger. Pour the melted butter et al into the bowl and mix to combine. As usual, do not overwork. Bring the dough together with your hands and roll into a cylinder. Wrap in greaseproof paper, twist the end like an old fashioned sweetie and chill
