This authentic dressing was passed down by the woman who hosted Stepf when she lived in the Loire Valley. It’s been modified over the years, with balsamic and thyme standing in for whatever magic Madame Vavasseur sprinkled into hers. It pairs well with root vegetables and kale, as well as tender spring lettuce. It is rather heavy, so a little goes a long way.
