These are crunchy, chewy little nuggets that even picky kids will gobble up. Lightly steaming the tempeh reduces its bitterness. Use soy-free tempeh (Yes, it’s a thing! We like Smiling Hara Black-Eyed Pea Tempeh.) and/or gluten-free bread crumbs if necessary. Wrap leftovers in a whole-grain tortilla with sprouts, shredded carrots, and a drizzle of Creamy Herbed Hemp Dressing for a quick lunch.
