Take your veggies and go! This smoothie is for those who prefer savory to sweet. It’s, of course, a play on the popular vegetable juice. Serve chilled in a glass with a salted celery–hemp seed rim and all the trimmings you’d use in a Bloody Mary. If there’s a veggie you don’t like, leave it out or add more of another.

Ingredients

  • 2 cups (60 g) spinach or (30 g) kale

Method

  1. Combine the spinach, tomatoes, carrots, celery, bell pepper, beet, parsley, scallion, basil, cayenne, and celery seed in a high-speed blender. Process, adding enough water and ice to achieve desired texture. Strain if desired.
  2. Pour into glasses and serve, garnishing with additional parsley or basil.
