I love green mung beans as they are powerhouses of goodness. This is the kind of food that is eaten day-in, day-out in India and for good reason – it’s inexpensive, highly nutritious and easy to cook. The creamy sweetness lent by the coconut milk and the bright zing of the ginger will make this a must-have in your meat-free repertoire.


  • 250 g/9 oz/ cups green mung beans

  1. Combine the green mung beans and measured water in a large saucepan and add 1 tsp of the salt. Bring to the boil, then reduce to a simmer and cook for 30–40 minutes, or until tender. Remove from the heat and set aside.
  2. Heat the oil in a large non-stick saucepan over a medium heat. When hot, add the cumin and mustard seeds, and cook until dark brown. Add the bay
