I love green mung beans as they are powerhouses of goodness. This is the kind of food that is eaten day-in, day-out in India and for good reason – it’s inexpensive, highly nutritious and easy to cook. The creamy sweetness lent by the coconut milk and the bright zing of the ginger will make this a must-have in your meat-free repertoire.
