All pilafs cook beautifully in clay; it’s as if the grain and the pot were made for one another. This recipe is a personal favorite and one that’s remarkably easy to prepare. Please remember, though, that bulgur can turn mushy from overcooking, so measure carefully. Although unglazed clay will wick off some excess moisture, it won’t save your bulgur if too much liquid is used.
