This is a basic bread recipe that can be used as a base to add an assortment of different flavours, including anything from wild mushroom and blue cheese to cider and apple. When the bread’s cooking your whole kitchen will be filled with the wonderful aroma of wild garlic.

  • 40 g fresh yeast
  • 850 g water

Method

Pre-heat the oven to 200°C/gas mark 6.

Dissolve the yeast with the water, add the oil. Mix the flour, salt and wild garlic together and make a well in the flour, gradually add the yeast mix and form into a dough. Knead the dough until it becomes smooth. Prove until doubled in s
