Chocolate and juniper were made for each other, and this dish is the perfect example. It’s similar to a fondant in that it should still be soft and slightly runny in the middle but, unlike fondant, it’s served in the dish.

Damsons are bitter and inedible when raw, but once stewed they taste amazing and they make fantastic ice cream. A glass of homemade damson gin is also a great addition to this dish.
