This simple stir-fry relies on lemongrass, garlic and chilli to give it a real punch while the ground coriander provides the perfect background warmth. Like every great dish, it needs seasoning. The salt element comes from the stringent fish sauce and the sourness from the beautiful tamarind water, which also works to bring all the flavours together perfectly.
