You won’t want anything too heavy to finish off this meal and I think this deliciously simple chocolate mousse is perfect. There isn’t any cream added to the mousse, which makes it wonderfully chocolatey yet exceptionally rich - therefore the relatively small portions are essential (chocoholics may disagree!).

Ingredients

  • 75 g dark chocolate (about 70% cocoa solids)
  • 1 egg, separated
  • 20 g

Method

Break the chocolate into small pieces and melt in a small bowl over a pan of just-simmering water, making sure the bowl isn’t touching the water. As soon as it has melted, remove the bowl from the heat and leave the chocolate to cool for a few minutes.
