This tart eats really well sitting on a rich Chocolate Sauce and topped with Coconut Ice-cream. All those flavours work so well with pineapple. The pineapple should be fresh and ripe. This will be a deep yellow colour with a moist sweet taste. If you find the pineapple to be firm and opaque in colour, the fruit will need to be poached in some Stock Syrup Until tender.
