Ingredients: 600 ml (1 pint) milk; 40 g (1½ oz) caster sugar; 600 ml (1 pint) Vanilla Ice-cream, made with a pinch of freshly grated nutmeg and without the vanilla pod or vanilla essence; 2–3 tablespoons water; 175 g (6 oz) raspberry jam; 50 g (2 oz) short-grain pudding rice; 15 g (½ oz) unsalted butter

I love baked rice pudding. It was one of my favourites at home with the lovely skin on top. Creamed rice pudding is also one of my favourites, especially with raspberry jam spooned on top. Well, I thought I would come up with the opposite. Rice pudding ice-cream with warm jam sauce. It works really well and when you tell your guests they’ve got rice pudding and jam sauce, this will definitely surprise them. This ice-cream also works very well in a Rice Pudding
