You might be surprised to see choux pastry in an Indonesian cookbook. Though choux puffs are originally French, they were brought to Indonesia by the Dutch. This sweet treat, called soes in Dutch and kue sus (sus cake) in Indonesian, is filled with vla, Dutch for “custard cream” (aka pastry cream).
