Shanklish, a spice-crusted, tennis ball-size sheep’s cheese, is a Syrian and Lebanese specialty. Crumbled and tossed with olive oil and herbs, it’s wonderful scooped up in warm flatbread. You can get it from Middle Eastern shops or substitute feta or goat’s cheese.
Combine all of the ingredients in a bowl and season with salt and freshly ground black pepper. Toss to mix well, then serve on a platter or in a shallow bowl and eat with warm flatbread.
