Oturtmas are dishes prepared with vegetables which are rounded and can be hollowed out, such as artichokes, auber gines or potatoes, and which keep their shape when cooked. Oturtma means “made to sit upright”.
Cut off the artichoke stalks and the outer leaves. Cut the lemon in half, dip in salt and rub the artichokes to prevent them discolouring. Remove the chokes and rub the insides with more salt and lemon.
To prepare the stuffing, melt the fat in the pan and fry the onions for 2-3 minutes. Add the mince and fry for 2-3 minutes until the meat soaks up its juices. Add the tomatoes and fry fo
