Kapama means “covered over”; in this case the minced meat is covered with layers of cabbage. The same ingredients can also be prepared by stuffing a whole cabbage with the meat, as in kapama of cabbage in olive oil.

  • 1 large white cabbage (1 kg/2 lb)

Method

To prepare the filling soak the currants in water for 30 minutes.

Melt the fat in a pan, add the pine nuts and fry for 1 minute. Add the onions and fry for 4-5 minutes until golden. Add the mince and fry for 5-10 minutes, stirring occasionally until the meat absorbs its own juices. Add the tomato purée and stir for 1 minute. Sprinkle on the pepper and salt.
