Mantı are prepared throughout Anatolia, and the city of Kayseri (the ancient Caesarea) is especially famous for them. To the people of Kayseri pastırma – spiced, cured meat – and manti are as popular a feature of their diet as anchovies among the natives of the Black Sea region.
