Peel the quinces and cut them in half, removing the seeds and core. Put in a pan with the water, cover and parboil over low heat for about 5 minutes. Strain the quinces, reserving the liquid. Add the sugar to the liquid and boil for 1 minute, then remove from the heat.
Return the quinces to the pan, cover, and cook over very low heat until the quinces are tender, spooning the syrup over
