This pudding has the most wonderful appearance when cut open. The lemon sits in a golden brown, silky pool of sugar, lemon juice and butter. Absolute bliss!

Ingredients

  • 225 g/8 oz/2 cups self-raising flour

Method

Thoroughly mix the flour and suet. Slowly add the milk and water and mix into a dough. Set aside a quarter of it and roll out the rest in a circle. Line a 1.5-litre/-pint/
