Tripe was a favourite dish in Poland, but has become difficult to obtain in recent years. Squid, on the other hand, which was not available previously, is now being marketed in ample quantity. With characteristic adaptability and a shrewd eye for logical substitutions, Poles now cook squid according to their traditional recipe for tripe. This version is based on an official pamphlet on squid cookery. Note the use of the first person plural, typical of modern Polish recipes.
