Spotted Dick was always one of those puddings I would look forward to at school. The moist dough with currants or raisins topped with loads of custard (usually lumpy!) was a treat. Like most of my recipes, this has so many variations. I always like the grated zest of 1 lemon added to the mix; this really helps lift all the other flavours.
