  • 1 lemon
  • 150 ml (5 fl oz) delicately flavoured extra virgin olive oil


Remove the peel from the lemon in strips and place in a small glass jar. (Reserve the lemon for another use.) Cover with the oil, seal with the lid and leave to infuse for at least 4 days at room temperature. Once you have achieved a pleasant lemon flavour, store the oil in the refrigerator.
