Lamb and mint form a combination that everyone knows. I took it a stage further to create this wonderful salad. We are fortunate that we can still buy the Scottish cheese Lanark Blue. In 1995 its producer, Humphrey Errington, fought a 13-month battle in the courts to defend its reputation against health officials, who claimed that as a raw-milk cheese it could contain the bacterium Listeria and thus cause food poisoning.
