  • 600 g (1 lb 5 oz) orange-fleshed sweet potatoes, peeled and cut into 1cm (½ in) dice

Method

Preheat the oven to 200°C/400°F/gas mark 6. In a bowl, toss the sweet potatoes with the cracked cardamom, cloves, cinnamon stick and bay leaves. Heat the oil and half the butter in an ovenproof frying pan, add the sweet potatoes and spices and toss in the hot fat for 5 minutes. Transfe
