The red ribbons of radicchio, the green beans and the pasta reflect the colours of Italy. With the lovely flavours of smoked chicken and tarragon this salad will start off any meal successfully.
Drop the beans in a large quantity of salted boiling water and boil for 3-5 minutes, keeping them very crisp. Remove the beans with a slotted or Chinese wire-mesh spoon and plunge into ice-cold water, drain again and set aside. (The water can be used to cook the pasta.) Wash the radicchio leaves and spin dry, then cut into long ribbons similar in size to the pasta you are using.
