Red pesto is a modern answer to the original green pesto made with basil and pine kernels.

Red pesto looks, and tastes, very different, but is just as good and quick to prepare.

Ingredients

  • 200 g (7 oz) sun-dried tomatoes in oil
  • 2 garlic cloves

Method

  1. Put the sun-dried tomatoes, garlic, herbs and chilli powder in the bowl of a food processor. Process for 30 seconds while adding the oil through the funnel. Transfer the pesto sauce to a bowl; taste it and adjust the seasoning. Place in a very low oven to heat.
