I created my version of this wonderful Mexican breakfast dish, huevos rancheros, many years ago for one of my restaurants that serves breakfast. I took the liberty of adding some avocado, sour cream, and lime to freshen it up.


  • Semolina or all-purpose flour, for rolling

Place two pizza stones in the oven and preheat the oven to 500°F (260°C) or to its highest temperature. Once it has reached the temperature, it will then take about 15 minutes for the pizza stones to heat up.
