About two hours before it is needed, start the batter. In a bowl mix the flour, a pinch of salt and the melted butter, then add water gradually until you have a thickish creamy mixture. Let it stand in a cool place. At the last moment beat the egg white to soft peaks and fold it into the batter mixture.
