Procedure
- Sift the confectioner’s sugar into a bowl.
- Add the gum tragacanth and mix in.
- Add the water and glucose. Mix until smooth.
- Transfer the mixture to a work surface. Kneed in the remaining sugar, or enough to make a smooth, firm dough.
- Roll the gum paste into a cylinder. Coat it with a light film of shortening (to
