Method

Procedure

  1. Sift the confectioner’s sugar into a bowl.
  2. Add the gum tragacanth and mix in.
  3. Add the water and glucose. Mix until smooth.
  4. Transfer the mixture to a work surface. Kneed in the remaining sugar, or enough to make a smooth, firm dough.
  5. Roll the gum paste into a cylinder. Coat it with a light film of shortening (to
