Name: Fresh apple, fennel and feta salad

Ingredients: 175 g block of feta, cut into 4 squares; 6 rashers of streaky bacon; 75 g walnuts, roughly chopped; salt and pepper; 1 tbsp olive oil; a small handful of coriander leaves, finely chopped; 2 green apples, such as Granny Smith; 75 g green (or golden) raisins; 1 garlic clove, crushed; juice of 1 lemon; 1 small fennel bulb; a pinch of caster sugar; 4 tbsp extra virgin olive oil

This is one of those simple, but totally satisfactory salads. The sour apple, salty feta and sweet raisins work like a dream. Omit the bacon for a veggie version.

Ingredients

1 tbsp olive oil
6 rashers of streaky bacon
75 g wal

Starter

Method

Heat the olive oil in a large, heavy-based frying pan over a high heat. Add the bacon and fry until crisp. Drain on kitchen paper and chop or scrunch into smaller, bite-sized pieces. Wipe the pan clean and dry-fry the walnuts over a medium heat, until just toasted. Remove and set aside.
