Ajiaco is a wonderful one-course meal. As you’d expect, it has typical South American ingredients: corn, avocado, two kinds of potato. It’s easy to make, looks lovely, is healthy, and none of your friends will have heard of it. The only downside is that the distinctive flavour, which is just perfect, comes from a common Colombian herb called guascas, which you won’t find in any supermarket.
