I once met a pastry chef who said that she abhorred all baked apple desserts because they were just too obvious, a low-hanging crowd-pleaser. I am not a pastry chef, and I like pleasing a crowd (or, in this case, a “crowd” of six people). Find an apple that will hold its structure when it bakes, like a Greening, Granny Smith, Jonagold, Northern Spy, Pink Lady, or Braeburn.
