Ingredients: vegetable oil for deep-frying; 2 sheets filo pastry; 3 tablespoons organ oil (or olive oil); 1 teaspoon caster sugar; 30 g chopped fresh mint; salt and freshly ground black pepper; 12 black olives; pinch of good cinnamon; 240 g feta cheese, cut into large dice; 1 red onion, thinly sliced; 2 tablespoons olive oil; 1 teaspoon smoked paprika; pinch of sumac (optional); 4 red peppers, halved and deseeded; 2 lemons, halved; 2 tablespoons flaked almonds, toasted; ½ garlic clove, crushed; 200 g ready-to-eat dates, chopped finely

A Middle Eastern-inspired salad with a combination of salty and sweet flavours. The date cigarillos can be prepared in advance and frozen until needed. Some fresh figs are also great added to this salad. Sumac is a tangy seasoning that has been used for thousands of years by Middle Eastern cooks, often as a replacement for lemon or vinegar.
