Soon after we opened the shop, we decided that it must have pork pies. In the early days, when we were doing our best to get things on the daunting number of shelves and fridges, these were a great thing to be able to rely on. The recipe has changed slightly over the years (there was a eureka moment with the addition of lardo). They don’t last forever, but they do last a bit longer than you might expect (four or five days), so hopefully you will have enough occasions to make the effort wort
